Honey Soy Chicken

I absolutely love honey soy chicken baked in an oven or cooked over a bbq..

I made some yesterday and it only took a few minutes to prepare.

Here is what you need:

2 Large cloves of garlic (crushed or finely grated)
2 tablespoons Ketcup manis (sweet soy ABC brand is nice)
2 tablespoons honey
Juice of one lime or half a large lemon
3/4 tablespoon finely grated ginger
1 tablespoon fish sauce (optional, can substitute with 1/4 tsp salt)
1/2 tablespoon salt
One medium chicken, skin and fat removed, cut into medium pieces and scored with a knife

Marinate for atleast 30 mins to an hour

Bake in a preheated 180 deg oven in a deep baking tray until cooked through (takes around 40 mins).. You can turn around about 20 mins through cooking time.

Alternatively cook on bbq (make sure pieces are not too big or else could be raw in the middle!)

Muesli Slice

Oneย  of the nicest and healthiest snacks you can have (apart from the sugar content ๐Ÿ˜‰

Ingredients:

Approx 80 gms butter (I just cut 1/3 off the 250g block).— Can replace with 1/3 veg oil (canola, or corn, sunflower etc)

2.5 cups rolled oats

1/2 cup sugar

1/2 cup honey

1 tsp all spice

1/2 tsp cinnamon

1 cup crushed almonds

1 cup desicatted coconut

1/2 cup sultanas

1/2 cup chopped dried fruits (apricots etc) optional

1/8 cup seasame seeds (optional)

Method:

Melt butter, sugar and honey over low heat until all sugar is disolved.(if using oil, do this on very low heat being careful not toburn or over heat the oil)

Mix dry ingredients in a bowl then add the warm (not hot) butter/sugar/honey liquid

Mix well

Line a deep baking tray (preferably rectangle approx 20 X30)ย  with baking paper and add the mix. Press down firmly into the tray

Cut the muesli bits into the size you like, but dont cut all the way down into the tray.

Bake in a preheated 160 deg oven until golden.(approx 45 mins)

Once cooled completely, cut ino slices. (if you try while hot, you are very likely to break them to bits as they come out very soft)

Best eaten the next day as it hardens and the flavours develop more ๐Ÿ™‚
