Pseudo Lahm Biajeen

This is not really ‘lahme bi3ajeen’ .. But it is really ‘lahme’ with ‘3ajeen’ ( ie meat with dough, hence why the name stuck in my family)
I was told by a lebanese sister that it is actually called kefta belkhubz ie kofta meat with bread.. so close enough :p

Super easy to make and very yummy:

Ingredients:

Mince meat (1/2kg)
Large onion chopped
handful of fresh parsely (chopped)
salt (approx 1/2 tsp) and black pepper
Lebanese bread (quartered)


Method:

Mix mince, onion, parsley and s/p.
Spread some of the mixture in a quarter of the open bread (you make a layer not too thick and not too thin).
Repeat with other pieces of bread until all the mince is finished
Oil a pan with olive oil and place the bread quarters (oil the top of the bread lightly)
Cook in a preheated 160 deg oven until cooked through ( I like them a bit soft and not crunchy)

Serve with chilli powder and lemon (or ketchup etc)

Lahm Biajeen- Lebanese Meat Pizza

Although I am not lebanese, I really love this.

I usually buy it ready made from lebanese bakeries but I sometimes make my own at home.

For those who would like to try it, here is my recipe:

Ingredients:

500 gms mince meat (I use diet/lean mince but some fat would be better in taste)
One ripe tomato chopped
2 table spoons tomato paste
One large onion chopped
about one cup of water (may need more or less)
salt and pepper

Chopped parsely

1/4 teaspoon ground cinnamon and 2 tsp sweet paprika (optional)

Pizza Dough (see pizza post)


Method:

Cook mince meat and onions on low heat with about 1/2 cup of water.
When mince is about 75% cooked add tomato, salt/pepper, tomato paste, extra water if mix is too dry, cinnamon and parsely.

Cook until the mix is moist but not liquidy. Remove from the heat.

Spread pizza dough thinly in oiled pans. You can use a thick or a thin base depending on how you like it, but traditionally it is thin.

Spread the mince mix over the dough and bake in a preheated 180deg oven until cooked and base is golden.

When ready, serve with freshly squeezed lemon juice and chilli powder (both optional)

Home made pizza

One of my family favourites:  Home made pizza!

The measurements are a bit rough..

2 cups of plain flour
1/2 cup warm water ( not HOT and not COLD)
teaspoon of sugar
teaspoon of salt
100g plain full cream yoghurt
packet of dry  yeast

Method:

Put the yeast in the warm water with the sugar and cover.. let it rest for 5 mins untill bubbles form on the top

Pour that onto the flour and salt and mix in the yoghurt
Add more flour or warm water when needed to form a dough
Allow to rest in a warm place for a few hrs until the dough rises

Grease 2 large pizza trays with approz 1 tablespoon veg oil..

take half the dough and roll into a ball.. press this down into the tray evenly

Sprinkle with dry herbs (oregano/marjoram, mixed herbs etc) tomato ketchup (approx 2 tablespoons) spreading evenly but not covering the crust area.

top with grated cheese(mixed mozerella and tasty cheddar and or parmesan), veg, chicken, meat, onions etc.. whatever you like 😀

sprinkle some more cheese ontop.
